		<description>Originally from: A Cowboy's Wife, adapted to replace eggs, dairy and refined sugar.
INGREDIENTS:

	2-3 heaping Tablespoons apple sauce
	2 Tablespoons oil (plus oil for the griddle)
	1 Tablespoon maple syrup
	1 cup non-dairy milk (or more--I like a thin batter)
	1 cup flour
	3 teaspoons baking powder
	1/2 teaspoon salt
